Apple Fritters

I hemmed and hawed about the title of this recipe. We call them apple fritters in our house. They are what my grandmother made for us as a snack since as long as I can remember eating snacks. But, they aren’t the typical fritter of chopped up ingredients tossed in a batter and fried. These are peeled and sliced apples coated in the batter and then fried. A minor distinction to be sure but they are a bit different than what you might have googled for. But, I think if you try them you might just be a fried apple ring convert!
Peel and core a couple of apples. Mimi always used Granny Smith. They hold up well to the heat and the tartness of the apples plays well against the sweetness of the powdered sugar. You will need a core remover to keep the slices intact.

Fry gently in about 1/4 inch of oil until they start to turn golden brown on one side. I use a fork to spear the apple and turn it over as the apple is still pretty firm at the flip point. Cook until the batter is golden brown on the second side. Remove to a paper towel lined plate. Sprinkle with powdered sugar and enjoy. A quick dessert or snack in a matter of minutes. CAUTION: The apples stay hot inside the batter so be careful when feeding little ones.
APPLE FRITTERS
2-3 Granny Smith apples, peeled, cored and sliced in about 1/4 inch slices
1 cup flour
1 cup milk
1 egg, lightly beaten
1 tsp. baking powder
2 tbsp sugar
Mix together batter ingredients. Add apples and toss to coat. Heat about 1/4 inch vegetable oil in a pan. Add the fritters and cook on one side until golden brown, about 2 minutes. Flip to cook the other side until golden brown, about 2 minutes. Remove from pan to a paper towel lined plate. Sprinkle with powdered sugar.
